A Taste from Aleppo Cuisine: Mansaf Freekah

Freekeh grain is popular in Syria, Lebanon, Jordan, and Egypt. Therefore, there are many ways of cooking and serving Freekeh dish in Syria. The pictures show the method of serving (Mansaf Freekeh) according to Aleppo cuisine.

The steps of serving start with a layer of freekeh being placed in the serving dish, then a layer of white rice, then minced meat and roasted chicken (chicken can be replaced with pieces of lamb), and then it is decorated with roasted almonds.

The dish is served with Ayran yogurt and a fresh green salad.
